Cod and mash
This is the same seasoning mix as for Cod tacos but it turns out that it goes really well with mash and vegetables too.
Ingredients
- 1lb cod loin
- 2 tbsp light olive oil
- 1 tbsp red NM chile powder
- 1 tsp ground cumin
- 1/2 tsp oregano
- 1/2 tsp mild/sweet (or smoked) paprika
- 1/2 tsp garlic powder
- 1/4 tsp salt and pepper
Instructions
Preheat oven to 400F.
Mix the seasoning and oil in a small bowl then, in a baking dish, completely cover the fish with it.
Bake for 12-15 minutes.
Serve with mash and vegetables, e.g.
- Pan fried asparagus — trim off woody parts of stem, cook 5-7 minutes over medium-high heat in a little light olive oil. Add a little butter and a crushed clove of garlic towards the end of cooking.
- Steamed veggies — carrots, broccoli, squash, zucchini
- Spinach — put a bag of frozen spinach into a saucepan, add 2tbsp water, cover and cook 5 minutes, remove lid and allow excess water to evaporate, season w/salt, pepper, optionally a little butter
