Cod tacos
Ingredients
- 1lb cod loin
- 2 tbsp light olive oil
- 1 tbsp red NM chile powder
- 1 tsp ground cumin
- 1/2 tsp oregano
- 1/2 tsp mild/sweet (or smoked) paprika
- 1/2 tsp garlic powder
- 1/4 tsp salt and pepper
Instructions
Preheat oven to 400F.
Mix the seasoning and oil in a small bowl then, in a baking dish, completely cover the fish with it.
Bake for 15 minutes.
Serve on corn tortillas and then:
- good with Curtido, Avocado salsa and/or “pink sauce” (a mix of mayo and Sriracha — sub mayo with sour cream is good too)
- also good with slices of avocado and Pineapple salsa
- a few crumbles of cotija cheese and a spritz of lime are nice too
Alternate seasoning mix
This is good if serving with the spicy variant of Coleslaw. Put a little olive oil on the fish and the cover with a mix of the following:
- Zest of 1 lime
- 1/2 tsp ground cumin
- 1/4 tsp Mexican oregano
- 1/4 tsp salt
- 1/4 tsp black pepper
