Ginger tea

Ingredients

  • 2" root ginger
  • 4 cups (1L) water
  • Juice of 1 lemon
  • 1 tbsp honey

Instructions

Peel ginger and cut into thin slices, add along the water to a saucepan and bring to a boil then cover and simmer for 20 minutes.

Strain into a 4 cup mason jar and stir in the lemon juice and honey.

You can easily get a second batch from the ginger.

Variation: instead of plain water, make green tea and use that instead. An easy way to do this is put some green tea leaves in a mason jar, add the water (~170F) and steep a minute, then strain into the saucepan.
