Greek meatballs
Ingredients
- 1lb ground beef
- 1/2 red onion finely chopped
- 2-3 garlic cloves
- 1 cup breadcrumbs
- 1 egg
- 1/4 cup chopped flat leaf parsley
- 6 large mint leaves, chopped
- 1/2 tsp dried oregano
- 1 tbsp Greek EVOO
- 3/4 tsp salt
- 1/2 tsp black pepper
Instructions
(Supposedly you should also have a further 6.5oz ground pork and use a whole red onion, but what a hassle…tastes fine as just a pack of beef)
Mix all the ingredients together and then form into meatballs. Bake 20 minutes (or longer if you have big balls…) @ 350F.
(You can also pan fry them if you want, but again, more hassle, messy, less healthy. If you do pan fry them, dredge in flour first for a crispier exterior.)
Really good with short grain brown rice, lentils and arugula and a generous drizzle of tzatziki.
Trickier to form balls if you sub ground turkey for beef.
