Green chile chicken stew

Quick and easy green chile that avoids hours of cooking pork.

Ingredients

  • 1lb hatch green chiles (roasted, peeled, chopped — like https://www.hatch-green-chile.com sells, Costco too iirc)
  • Half white onion, chopped 
  • 6 or so garlic cloves, finely chopped
  • Juice of 1 lime
  • 1 tsp red chile powder
  • 1 tsp corn masa (optional)
  • 1 tsp salt 
  • 1/2 tsp black pepper
  • 1/2 tsp ground cumin
  • 1/2 tsp oregano
  • 1/4 cup flour
  • 1 carton (4 cups) chicken stock/broth
  • 1 deli chicken, half the breast meat shredded
  • 1 tbsp oil
  • One red pepper — roasted, peeled and chopped or chopped and gently fried until very soft

Instructions

Fry onion in oil over medium-low heat until softened. Try not to brown. Add garlic, stir, cook briefly. Add hatch chiles and flour, stir until well combined. Add red chile powder, cumin, oregano, salt and black pepper. Stir and cook a few moments. Add chicken stock and lime juice, bring to a boil, reduce to simmer and cook at least ten minutes to combine flavors and further soften everything up; simmering for longer seems better up to maybe 30 minutes.

Put 3 ladles-worth into blender, let cool then purée and return to pan. Add shredded chicken and the red pepper. Cook a further ten minutes. Serve with shredded cheese, sour cream and tortillas.
