Shiitake stir fry

Ingredients

  • 1 cup (about 240 milliliters) sliced Shitake mushrooms
  • 2 tablespoons olive oil
  • 3 green onions, sliced
  • 3 garlic cloves, minced
  • 2 bell peppers, seeded and chopped
  • 1 tablespoon rice wine
  • 2-3 tablespoons soy sauce
  • 1 teaspoon toasted sesame oil

Step-by-Step

  1. Put the wok on high heat and add the olive oil.
  2. Once the oil is hot, add the onions and fry them for a minute.
  3. Add in the garlic and fry for 30 seconds.
  4. Add in the peppers and mushrooms, fry for about 2 minutes.
  5. Pour in the soy sauce and rice wine and fry for another 2 minutes.
  6. Remove wok from the heat, add in sesame oil and stir thoroughly. Enjoy!

Notes

This was delicious — quite a small portion even for just two people. Felt like you could cook “faster” (less time) for some of the steps. Might have been nice to have some rice to go with this, or start w/miso soup. Def have room left for a fruit-based dessert which I guess is good. 

Second go: lower heat — not a good idea, stewed more/less liquid evaporation. Added bean sprouts. Used oyster mushrooms. Added gomasio and sriracha to serve. All changes except heat were a win.
